Grilled Cheese with short ribs, caramelized onions, and cheddar

All bragging aside, I made this recipe up on the fly and it turned out to be literally the best sandwich I have ever made.  It wasn’t the prettiest sandwich, and was originally just a means to use some leftovers, but WOW – this tasted amazing!!  I have never had the McRib, but I can see why it keeps coming back.  The tangy horseradish sauce, sweet BBQ, savory ribs and cheddar cheese all work together with the caramelized onions to make this dish straight up phenomenal.  Enjoy this sandwich, but be warned there is no way you won’t be making it again!

Ingredients:

1 handful of shredded cheddar cheese
1 Barbecue Short Rib
1 yellow onion
2 Tablespoons sugar
1 Tablespoon Horseradish sauce
2 Slices of sourdough bread
2 Tablespoons butter
1 Tablespoons Olive Oil

To begin, chop up some onions, shoe string style.

Put a frying pan down to caramelize the onions over medium heat.  Add butter and Extra Virgin Olive Oil.  Add the onions.

After the onions have cooked about 5 minutes, they will start to become translucent.  Add 2 tablespoons of sugar and stir often.

After about 15 minutes the sugar will cause the onions to caramelize, scrape all the browned parts off of the bottom of the pan.  Add a tablespoon of water to deglaze if necessary. 

After about 20 – 25 minutes – your onions are good to go!

Next prep your sandwich.  Set up a clean frying pan and put the burner over medium low heat.  Add one tablespoon of butter the pan.  Slice two slices of bread, and slice your ribs to be thin and easily piled on a sandwich.  I microwaved my ribs after slicing them for about 30 seconds to aid with the melting the cheese.  Put down your first slice of bread, and add Horseradish sauce.  I had some of this leftover from a previous recipe, but this is an easily bought item pre-made at your local grocery store.

Next add the Barbecue ribs.

Pile on some of those caramelized onions!

  Top it off with a handful of shredded cheddar cheese!

Cook the Grilled Cheese, flipping once, until the bread has toasted and the cheese has melted.  Then serve!  This dish was surprisingly tasty- I hope you enjoy this as much as I did!
