Welsh Rarebit

Welsh Rarebit is a delicious and quick dish, that utilizes a lot of ingredients which are usually on hand in most kitchens.  My all time go to recipe, when I am staying with my parents, is the simple but tasty meal of eggs and toast; adding the spicy flavorful cheese sauce compliments and enhances this already amazing combination.  The cheese sauce was not only great with my breakfast creation, but would be wonderful served fondue style with Apples, Carrots, Bread, Celery, Broccoli, and whatever else you can think of!



1/4 cup Butter
Salt and freshly ground pepper, to taste
1 tsp dry mustard
1 tablespoon Worcestershire sauce
Tabasco Sauce, to taste
1/4 cup of flour
1 cup 2% milk
1/2 cup beer, Blue Moon
7 oz cheddar cheese

Fresh eggs (1 per person)
Sourdough Bread Toast slices (2 per person)

First, melt the butter over medium low heat.

Add the Worcestershire sauce, dry mustard, hot sauce, salt, and pepper.  Cook for 2 minutes.

Add the flour and cook for three minutes while constantly whisking.  When the mixture begins to bubble up and become frothy remove from heat.

Add the milk and put pan back onto the burner.  Whisk until sauce becomes very thick, about 3 minutes.

When the sauce has thickened, add the Blue Moon into the mixture.

Turn burner down to the lowest setting.

Grate, or chop, your cheese into cubes that will easily melt.

Add the cheese to your mixtures in 3 batches, allowing the cheese to melt completely before adding more.

Using butter or cooking spray, grease a frying pan and turn to medium low.  Cooking an egg at a lower setting will reduce the skin that can form on the bottom where the egg has touched the frying pan. Crack the egg in the frying pan leaving the yolk intact.

Add a splash of water and cover. This method of cooking an egg over easy will allow you to cook the bottom and steam the top.  There is no flipping involved (and possible yolk breakage!) and the result is a beautiful tasting and looking egg.  The egg is over easy as soon as the yolk has a thin layer of the white over it, causing it to look slightly cloudy.

Using Sourdough bread, cut two thick slices.  Toast in your toaster oven to be crispy.

Once all of the cheese has been combined into the sauce, it will be very thick, glossy, gooey, and great smelling!

 Time to plate your dish!  First place the two pieces of sourdough toast down.

 Next add the cheese sauce.

 Top with your perfectly cooked over easy egg.  Garnish with parsley and Tabasco Sauce!
