Blueberry Waffle Jello Shots

 While browsing for fun recipes to make for a party, I discovered this amazing blog: The Jelly Shot Test Kitchen.  I love the idea of turning something that is usually a bare bones cocktail used at college parties into something much more gourmet! I thought I would give one of their recipes a try for a Game of Thrones get together, and it turned out to be a great success!  I followed the recipe almost exactly, but decided to use fresh blueberries in my waffle shots.

 
 
 
Ingredients:
1 cup fresh squeezed orange juice, strained to remove solids (2 oranges)
2 tsp lemon juice 
1/4 cup Grade B maple syrup
2 envelopes plain Knox gelatin
1 cup cake flavored vodka
Fresh Blueberries
 

  To begin, spray your jelly shots mold with non-stick cooking spray (I used butter flavor). 

Use a paper towel to wipe off any excess spray, there should only be a light film of cooking spray remaining to help the molds come out easier.

 Juice the oranges and strain any pulp out of the juice.

 Add the orange juice, lemon juice, and maple syrup to a pan over low heat. Add the two packets of gelatin and let absorb

.  

  Stir constantly for about 5 minutes over low high to bring the mixture together and dissolve the gelatin.  Remove from heat, and add the cake flavored vodka. Pour the mixture into a container  that will allow you to pour the liquid into the mold easily.

 I placed my mold in a 13″ x 9″ pan because I used a flexible plastic mold, and wanted to be sure it would set correctly in the fridge and be easy to move.  Add the gelatin mixture into the mold.  Add a fresh Blueberry (or two) into each mold.  Cover with plastic and set over night (or for 6 hours) in the refrigerator.

 

And Voila!! These Waffle Shots turned out fantastic! Enjoy with friends!
