Spinach Artichoke Dip

A staple at football games and group gatherings, spinach artichoke dip can be made with a number of minor variations to suit any palette. This recipe is one I like to use because it consists of mostly ingredients I have on-hand; and it tastes amazing!

Ingredients

1 cup Parmesan & Romano cheese, grated
8 oz package cream cheese, room temperature
1/2 cup mayonnaise
2 cloves minced garlic
salt & pepper to taste
10 oz frozen spinach, thawed and water squeezed out
12 oz artichoke hearts, drained (I used two 6 oz jars)
1/4 cup mozzarella cheese

Combine the Parmesan & Romano cheese, cream cheese, mayonnaise, garlic, and salt & pepper until well blended using a hand mixer. Gently fold in the spinach and artichokes.

Mix until consistent throughout.

Top with shredded mozzarella cheese and bake for 20-30 minutes or until cheese on top is melted and lightly browned.

Serve with crackers, toasted bread tips, or chips! We love to serve this dip with Frito’s SCOOPS!
