Baked Chicken Parmesan

A classic Italian dish, Chicken Parmesan comes in all shapes and sizes. This is a recipe for a pretty standard, baked version. I like this option because it’s not fried and super fattening, and you can really bring out the flavor of the sauce and cheeses. Serve with a side salad and a side of pasta for a complete, weeknight meal!

Ingredients:

2 large chicken breasts, about 12oz each
3/4 cup seasoned bread crumbs
1/4 cup grated Parmesan cheese
1 egg, beaten with 1/2 tbsp water
2 tbsp olive oil (I used basil-infused olive oil, yum!) 
1 cup marinara sauce (I used Wegmans brand)
3/4 cup Mozzarella cheese

Preheat oven to 425 degrees and line a baking sheet with non-stick foil.

First, gently pound each chicken breast to an even thickness, about 3/4 inch. I don’t have a mallet, so I used the flat bottom of a heavy glass. Go Ravens!!!

Cut each chicken breast in half so you now have four pieces. In a bowl, combine breadcrumbs and parmesan cheese. One piece at a time, dredge the chicken through the egg wash and then through the breadcrumb mixture, pressing gently to help the crumbs stick.

     

Place each piece of chicken at least two inches apart on your pre-lined baking sheet. Bake for about 15 minutes. Turn the pieces over and bake for another 10 minutes.

Remove from oven and lightly spoon marinara sauce over each breast to thinly cover the surface. 

  

Sprinkle with even parts mozzarella cheese and bake for 5 minutes more, or until cheese is melted.
