Ingredients

2 lbs tilapia fillets
1 tbsp melted butter
1 tbsp olive oil
1/2 pint heavy cream
2 cloves garlic, minced
1 heaping tbsp chives, chopped fine
1/4 cup fresh cilantro, chopped
juice from half of a lime
salt & pepper, to taste

Preheat oven to 350 degrees.

First, heat oil in a saucepan over medium for 30-45 seconds. Add garlic and chives and saute for 2 minutes. Add cream and simmer for 3-4 minutes, slightly reducing the mixture.

Add lime juice, cilantro, and salt & pepper. Stir for another minute or so and then remove from heat. Set sauce aside until ready to serve.

Note: You can make this sauce ahead of time! Refrigerate for up to 10 days and reheat as needed.

Now, cover a baking pan with non-stick aluminum foil, or use cooking spray to prevent sticking. Lay you tilapia filets on the foil and brush evenly with melted butter. Sprinkle with salt & pepper to taste. Gently flip over each filet with a pair of tongs and repeat.

Place pan in oven and bake for 25-30 minutes or until done. Pour heated cilantro cream sauce over each tilapia fillet and serve.
