Mom’s Baked Beans

This is a recipe that my Mom has made many times over the years – because its so frequently requested and universally loved!  These beans are always the first thing to go at a backyard cookout or family get together, and with cheddar cheese, bacon, onion, and BBQ flavors it’s no surprise as to why!  I convinced my Mom to send her me secret recipe and I was delighted with the way it turned out. So flavorful and cheesy and gooey!  This recipe is very simple to make and can be done in a slow cooker, which is convenient and cuts down on the dishes.  I hope you enjoy this recipe as much as my family has!
 
 
Ingredients:
 
6 slices bacon
1 cup red onion, chopped
1 can pork and beans
1 can black beans
1 can cannellini beans
1 can kidney beans
8oz cheddar cheese, cubed
1 cup ketchup
2 tablespoons Worcestershire sauce
3/4 cups brown sugar
 
To begin, cut the bacon into lardons and cook over medium heat until well done.  Remove from pan and drain on a paper towel. Add to slow cooker.
 
 
Add the onions into the skillet used to cook the bacon, and saute for about 5 minutes.  Add to slow cooker.
 
 
Drain the three bean cans – besides the pork and beans – through a colander in your sink.  Add to slow cooker.
 
Cube the cheddar cheese into 1/2″ pieces.  The goal is to have these cubes stay somewhat in tact and be a bite of cheese in the final dish, not the melt completely into the baked beans. Add to slow cooker.
 
 
Add the ketchup, Worcestershire sauce, and brown sugar to the slow cooker.
 
 
Mix well and set your slow cooker on high for 1 hour.
